Tigers & Strawberries: Easy Everyday After-Work Curry That Anyone Can Make
Barbara’s original recipe calls for chicken, but around here it gets turned into a vegetable medley (tonight’s mix: yam, carrots, cauliflower, green beans, and peas). I’ve found that there’s normally enough sauce for at least 3 lbs of vegetables.
The optional shredded coconut is a really good addition. Most of the time I toss the browned onions into the mini chopper with the garlic, ginger, etc for a completely smooth sauce.
